We chose this coffee because it uses a natural process that utilizes a solvent of ethyl acetate to extract the caffeine from the coffee, thus successfully preserving the beautiful notes of this Colombian coffee. We recommend it for all of your decaf needs. If you're interested in how this coffee uses a natural process to become decaffeinated, here's a little excerpt from one of our importers, Cafe Imports. "The process works by soaking green coffee in a solution of E.A., which bonds to the salts of chlorogenic acid in the coffee and allows for the removal of caffeine. The coffee is removed from the solvent and steamed at low pressure to remove the E.A. compounds, and the finished product retains its flavor integrity but contains almost no caffeine at all. 2021's Holiday Blend is sure to bring cheer to anyone near. Our goal with this roast was to have sweet cranberries notes, a rich body, and hints of holiday spices – cinnamon, nutmeg, etc. To accomplish our goal, we used our organically grown Natural Honduran from Cafe Organico Marcala & our Yellow Honey Costa Rican from Las Casita. These coffees pre-blended together and slow-roasted to a medium-level roast gave us the beautiful flavors we were asking Santa for this year.
